Green bean and potato meatloaf

A tasty and very simple dish of vegetables: here is the recipe for Genoese meatloaf made with potatoes and green beans.

Preparation of potato and green bean meatloaf

  1. To prepare this vegetable meatloaf, start by removing both ends of the green beans and peeling and dicing the potatoes.
  2. Cook green beans and potatoes in boiling salted water for about twenty minutes .
  3. Drain everything, pass the tubers through a potato masher and half the boiled green beans with a blender .
  4. Transfer everything into a bowl then add the parmesan , eggs, marjoram, pepper and salt and the remaining whole green beans. Mix everything to obtain a homogeneous mixture.
  5. Oil the bottom of a baking dish, sprinkle with breadcrumbs then pour in the potato and green bean mixture. Distribute well with the help of a spoon and finish with a sprinkling of breadcrumbs and a drizzle of oil.
  6. Using the tines of the fork, make decorative lines on the surface. Bake in a preheated oven at 180°C and cook for 30 minutes or until desired golden brown.
  7. Remove from the oven and let the potato and green bean meatloaf cool before serving, enjoy your meal!

storage

This delicious meatloaf will keep for about 4-5 days in the refrigerator, inside a container with an airtight lid. If you used all fresh products you can also freeze it in the freezer.
