Preparation of gluten-free chicken nuggets

  1. Cut the chicken breast into large pieces then mince everything with the meat grinder. Pour the minced meat into a bowl and add the salt, corn starch, grated Grana Padano and mix to mix everything together. Moisten your hands and form meatballs.
  2. Lightly crush the meatballs then dip them in beaten eggs and cornmeal to which you can also add powdered spices. Dip the meatballs again first in the beaten egg and then in the cornmeal.
  3. Arrange the meatballs on a baking dish on the bottom of which you have brushed a couple of tablespoons of tomato puree and bake in a preheated oven at 180°C for 20 minutes or until desired browning.

Alternatively, you can opt for the classic frying method: fry the chicken meatballs in plenty of hot seed oil so that they are crispy and golden brown. Gradually lift the meatballs with a slotted spoon , drain the excess oil and serve piping hot with sauces and side dishes of your choice.
