How to prepare the recipe for gluten-free soaking cookies

  1. First, break the eggs into a bowl and add the sugar. Whip everything with an electric whisk until the mixture is light and fluffy.
  2. Then add the milk and oil and mix quickly.
  3. Now all that remains is to incorporate the other dry ingredients : sifted flour and starch, yeast and lemon zest (or vanilla). Gently mix from the bottom up to avoid disassembling the mixture.
  4. You will get a fairly soft compound but don't worry. Let it rest in the refrigerator for 30 minutes before proceeding.
  5. Give the biscuits the shape you prefer, from the most classic round to the donut through the stick (the important thing is that they do not exceed one centimeter in thickness) and as they are ready, place them on a baking sheet lined with parchment paper. Cook them at 180 ° C for 20 minutes and let them cool on the pan before consuming them.
