Soft and delicious, this gluten-free cherry cake is a perfect dessert for using fresh cherries and thanks to the use of specific flours it can also be consumed by those who are gluten intolerant . However, it is very important to check that the "gluten-free" indication or the crossed-out ear symbol is present on the packaging of the ingredients used. Let's get to work right away!

Preparation of the soft gluten-free cherry cake

  1. Cut the already washed and pitted cherries in half, place them in a bowl then mix them with a spoonful of sugar and the lemon zest to give them flavour. In the meantime, shell the eggs into the bowl of the mixer, add the sugar, salt and start whipping until you obtain a frothy mixture.
  2. Sift the buckwheat flour, rice flour, starch and yeast and add them a spoonful at a time to the egg and sugar mix. Work everything together to obtain a homogeneous mixture, then add the oil and cherries. Mix well and pour the mixture into a cake tin lined with baking paper.
  3. Roll out the dough well and bake in a preheated oven at 180°C for 35 minutes. Once cooked, remove from the oven and let cool completely before sprinkling with icing sugar and serving.

storage

Store the cherry cake under a glass bell jar for about 3/4 days. If it is very hot, put it in the fridge to prevent the fruit from deteriorating but before enjoying it, take it out in time.
