1. Bring a pot of water , oil and salt to the boil, then add the flour , stirring with a wooden spoon. Remove the pan from the heat and continue stirring vigorously or you will no longer be able to work the mixture.

2. Transfer it to a floured pastry board and knead vigorously to obtain a smooth and homogeneous dough. If necessary, add a little more flour. Cover it with an overturned bowl and let it rest for half an hour.

3. Then remove some portions of dough and work them to form loaves of about 1.5 cm in diameter.

4. Then cut them into chunks with the help of a tarot or a knife and pass them on the gnocchi line . Alternatively you can use the prongs of a fork.

How to season gnocchi without potatoes

Gnocchi is a delicious first course that lends itself to many variations, as well as the version without potatoes. Using your imagination and our recipes, you can indulge yourself!

  • Finally, you can prepare a cream and salmon variant. In a non-stick pan, put the chopped shallot, the smoked salmon into strips and the oil. After cooking the salmon, add the cream and cook for a couple of minutes. Then add the gnocchi and enjoy your delicious first course.

The flour gnocchi are cooked like the traditional ones, boiling them in plenty of salted water and draining them a couple of minutes after they float directly into the sauce pan. Keep the soft gnocchi without potatoes for a maximum of 2 days in the refrigerator.
