The desire for sweets can be really insistent and relentless, but when it comes to trying on a swimsuit or our favorite jeans that don't close anymore, then we need to remedy it somehow. Giving up sweets is the easiest way but at the same time fraught with pitfalls so opting for light cakes seems to be the only possible solution.

We have prepared a collection of light cake recipes, all delicious and simple to prepare that will satisfy you while keeping your calorie intake under control. No special ingredients are needed and there are no procedures other than those normally done. Even the flavor will live up to your wishes and you can finally treat yourself to a slice of light cake without feeling too guilty.

Soft, light and fragrant, when it comes to light cakes, the yogurt donut always appears among the recipes. It is difficult to understand why but it is certain that the shape has something reassuring, homely and genuine. Excellent for breakfast or as a snack, it's ready to be baked in ten minutes.

Ingredients for 4 people:

  • 300 g of 00 flour
  • 60 ml of sunflower oil
  • 3 whole eggs
  • 125ml plain yoghurt
  • 100 g of sugar
  • zest of an untreated lemon
  • 1 sachet of baking powder
  • About 10-12 strawberries
  • powdered sugar to taste

Break the eggs and beat them with the sugar until they are light and frothy. Then add the yogurt, oil and sifted flour with baking powder. Flavor with the lemon zest and pour the mixture into a buttered and floured ring-shaped mould. Bake at 170°C for 35 minutes , doing the toothpick test before removing from the oven and decorating with icing sugar and strawberries once cold.

The tart is among the most loved desserts and making it light is really simple. The recipe for the light tart is proof of this but we have to warn you: it is addictive with its crumbly texture and equally sweet flavour, to the detriment of the scarcity of sugar!

Ingredients for 8 people:

  • 300 g of wholemeal flour
  • 100 g of seed oil
  • 100 g of brown sugar
  • 1 egg
  • 1 yolk
  • 1 teaspoon baking powder
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 250 g of sugar-free jam

Combine the flour, baking powder, a pinch of salt and the vanilla extract in a bowl. Form a fountain, break the eggs in the center and start kneading with a fork, then add the oil. Finish working the dough with your hands and when it is compacted roll it out between two sheets of parchment paper until it reaches half a centimeter thick. Transfer it to a 24 cm diameter pan, prick the bottom and stuff the hollow with the jam . If desired, create decorations with the excess dough then cook at 170°C for 30 minutes.

When we talk about light cakes, surely cheesecake is not among the first to come to mind. Yet it takes very little to transform the classic recipe and obtain a light cheesecake which, thanks to the decoration of fresh fruit, is transformed into a real triumphal dessert.

Ingredients for 8 people:

  • 150 g of dry biscuits
  • 60 g of light butter
  • 250 g of 0% Greek yogurt
  • 200 g of light spreadable cheese
  • 250 g of cottage cheese
  • 90 g of sugar
  • 10 g of isinglass
  • 2 tablespoons of water
  • fresh fruit to taste

First, prepare the base by blending the biscuits and mixing them with the melted butter. Pour everything into the bottom of a 20 cm diameter springform pan, pressing down well, and place in the fridge. After having soaked the gelatin in cold water, proceed with the filling by mixing yoghurt, spreadable cheese, ricotta and sugar. Add the isinglass squeezed out and dissolved in two tablespoons of hot water and then pour it all over the base. Leave to compact in the refrigerator for 5-6 hours then decorate with fresh fruit before serving.

There is something really comforting in this light cake recipe, probably thanks to the fact that it can be served on any occasion without the fear of making a bad impression. Add to this that preparing the light apple pie is really simple and so you will have no more excuses for not preparing it.

Ingredients for 8 people:

  • 4 apples
  • 2 eggs
  • 120 g of sugar
  • 160 g of 00 flour
  • 180 ml of semi-skimmed milk
  • 1 sachet of baking powder
  • lemon juice to taste
  • cinnamon to taste

Work the eggs with the sugar then add the sifted flour with the baking powder and the milk slowly. Flavor with cinnamon and grated lemon rind then add three diced apples . Pour the mixture into a baking tray lined with parchment paper, decorate with the remaining apple slices and cook at 180°C for 40 minutes or until the surface is golden brown. Serve warm or room temperature.

Another delicious light cake is the one with a flavor reminiscent of the classic Camille. We're talking about light carrot cake , light, fluffy and with a delicate flavor . Prepared with wholemeal flour, it is healthier than the traditional recipe but no less good for this.

Ingredients for 8 people:

  • 250 g of carrots
  • 120 g of 00 flour
  • 120 g of wholemeal flour
  • 180 g of cane sugar
  • 3 eggs
  • 80 g of seed oil
  • 1 sachet of baking powder
  • icing sugar to taste

Break the eggs into a bowl, add the sugar and work them with an electric mixer until they are light and frothy. Then incorporate the oil and the grated carrots, then the sifted flour with the baking powder. Once you have obtained a homogeneous mixture, pour it into a pan lined with parchment paper and cook at 180°C for 40-45 minutes , until the toothpick test tells you that it is ready. Once cold, decorate as desired with a sprinkling of icing sugar.

We know you've been waiting for her because she's basically everyone's favorite. We are talking about the light chocolate cake which, although limited in ingredients and calories, retains all the flavor of cocoa. Preparing it is very simple here's how we do it!

Ingredients for 8 people:

  • 200 g of flour 0
  • 220ml of milk
  • 60 g of dark chocolate
  • 90 g of cane sugar
  • 20 g of bitter cocoa
  • 1 sachet of baking powder
  • 50 g of sunflower oil
  • 1 pinch of salt

Sift the flour, cocoa and salt into a bowl, then add the sugar and give it a quick stir. Add, mixing with a whisk, the oil, milk and melted chocolate. Finally add the yeast and pour the dough into a 24 cm diameter pan lined with parchment paper. Bake at 180°C for 40 minutes , doing the toothpick test before removing from the oven.

The egg white cake , with its candid color, is a very special dessert. Perfect not only for recycling leftover egg whites, it is ideal for breakfast or as a snack. A dusting of powdered sugar will be enough to present it, nothing more.

Ingredients for 8 people:

  • 4 egg whites
  • 50 g of starch
  • 90 g of rice flour
  • 40 g of corn starch
  • 10 g of cream of tartar
  • 1/2 teaspoon baking soda
  • 75 g of stevia
  • 100 g of seed oil
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of almond flavoring

Combine flour, starch, corn starch, cream of tartar, baking soda and flavourings. Add the oil and lastly the whipped egg whites with the stevia. Gently mix to prevent the dough from falling apart, then pour it into a 24 cm pan lined with parchment paper and cook at 180°C for 30 minutes. Once cold, decorate as desired with a sprinkling of icing sugar.

Water brownies are a valid alternative to the classic recipe, rich in butter and eggs. In this version you will keep all the flavor of the chocolate while significantly reducing the calories so there really is no excuse not to prepare them.

Ingredients for 4 people:

  • 200 g of 00 flour
  • 100 g of granulated sugar
  • 50 ml of sunflower oil
  • 30 g of bitter cocoa
  • about 250 ml of water
  • 1 small cup of barley coffee
  • 1 sachet of vanilla yeast

Combine all the dry ingredients in a bowl (flour, sugar, cocoa and baking powder, preferably sieved) and separately mix the oil, water and coffee. Pour the liquids on the powders, mixing well with a kitchen whisk until the mixture is smooth and homogeneous, then pour it into a rectangular pan lined with parchment paper and cook at 180°C for 30-40 minutes , doing the toothpick test before removing from the oven. . Once cold, serve them cut into squares.

Ingredients for 8 people:

  • 230 g of type 0 flour
  • 280 g of 0 fat Greek yogurt
  • 25 drops of sweetener
  • 40 g of sunflower oil
  • 1 sachet of baking powder
  • 1 organic lemon

Mix the yogurt, the sweetener, the grated lemon zest and the oil in a bowl, then incorporate the sifted flour and baking powder, mixing with a kitchen whisk. Pour the dough into a 20-22 cm baking tray lined with parchment paper and bake at 180°C for 35-40 minutes , doing the toothpick test before removing from the oven. If desired, decorate with icing sugar before serving.
