How to marinate ribs

First, buy the whole rack of pork and not the pre-trimmed ribs.

  1. Remove the cartilage and any excess fat . Not everything though, because it will help keep the meat tender. You should also remove the whitish membrane that can be seen on one side of the whisker ( the pleura ), alternatively you can engrave it with a knife with long diagonal cuts.
  2. Pour all the ingredients for marinating the pork ribs into a pan large enough to contain the meat: the wine , the whole garlic , the shallot slices, the rosemary needles and the peppercorns .
  3. Place the meat and cover with plastic wrap.
  4. Leave the ribs to marinate for a couple of hours , turning them halfway through the time.

How to cook ribs on the grill

A requirement to obtain excellent ribs is to cook them at temperatures that are not too high for a long time . It goes without saying therefore that barbecues with lids will allow you to better control these parameters.

  1. After the marinating time, it's time to light the fires. To cook the ribs on the grill it is important to use indirect heat since the cooking times are quite long. If you have a charcoal barbecue (or with briquettes) prepare it for indirect cooking, in the case of the gas one instead light two side burners away from where you will place the meat.
  2. It is then possible to place the ribs lying down , in the traditional way, or standing up , with the help of the special support. In this case, make sure that the fattest and most fleshy part remains at the top so that the fat, dripping, keeps the meat tender.
  3. Indicatively, it will take 50-60 minutes at 170°C to obtain the correct cooking of the ribs.

It is always better to consume freshly grilled meat because it tends to dry out over time. However, if you have any leftovers, you can keep them in the refrigerator for 2-3 days . Leftover ribs are best reheated by wrapping them in aluminum foil and placing them in the oven at 150°C for 20-30 minutes.
