The grilled salmon fillet allows you to keep the flavors of the fish intact, enhancing them with a few simple ingredients.

Today we are preparing one of the most delicious fish main courses ever, grilled salmon, a dish that is made with a simple marinade that gives the fish flavors and aromas. Furthermore, this step allows you to protect the fish during cooking, keeping the meat soft and avoiding the oxidation of all nutrients.

If you want, you can also replace the thyme with other aromatic herbs, and vary the ingredients of the marinade according to your taste. If you want, you can also accompany the salmon fillets with a lemon wedge.

How to cook grilled salmon steaks

  1. First of all, let's deal with cleaning the salmon. If you have purchased slices already cut, you can skip this step. Otherwise, fillet the salmon with a sharp kitchen knife and cut into rather thick slices, then remove all the bones and wash them under running water. Let the fillets dry.
  2. At this point, let's move on to the marinade . Clean the spring onion by removing the outermost layer and chop it coarsely. Pour it into an airtight container with the oil, the white wine, the leaves of a sprig of thyme, the bay leaf and some pepper, finally mix everything well.
  3. Take the four slices of salmon with the skin on and put them in the marinade, taking care to grease them all over. Close the container and marinate in the refrigerator for 45 minutes , and then for 15 minutes out of the refrigerator.
  4. Now let's see the cooking phase of the salmon. Put a grill pan on the stove and bring it to temperature. Take the steaks, drain them from the marinade, which you have to set aside, and place them skin side down on the hot plate.
  5. Cook for three minutes (even less if the slices are not very thick). Flip the salmon and cook on the other side for 1-2 minutes. Remove from the grill pan and arrange the steaks on serving plates.
  6. Season with a pinch of salt, a grind of pepper, a few fresh leaves from the second thyme sprig and a few drops of the marinade oil, avoiding to collect the solid ingredients. Enjoy your meal!

Pairings with grilled salmon

The best way to enjoy this exquisite dish is to combine it with crunchy vegetables, which create interesting textures in the mouth. Asparagus and salmon are undoubtedly a winning combination, but more classic vegetables such as potatoes, courgettes and carrots will also work well.

Another touch of class can be to accompany the fish with a sauce, which degreases the meat and gives a touch of acidity and creaminess to the dish. If you want to create an exquisite salmon sauce, mix natural yogurt with 2 tablespoons of mustard, salt, pepper, a drizzle of extra virgin olive oil, a drop of lemon juice and dill.
