How to make grilled vegetables

  1. To make a perfect dish, the important thing is to cut all the vegetables into thin slices.
  2. For example, if you want to prepare fabulous grilled courgettes, cut the courgette lengthwise and make thin slices: in this way the cooking times of the vegetables will be short, but at the same time you will have a perfect consistency and taste !
  3. Then put them on the hot grill a few at a time (whether it's a barbecue or a cast iron pan to cook them at home).
  4. Turn them over after 4-5 minutes being careful not to burn them.
  5. Cook the other side as well and, if necessary, turn them over again to complete the cooking.
  6. Put them in a serving dish (deciding whether to divide them by type, which we recommend especially if you also use peppers, which could alter the taste of the other vegetables).
  7. Season with oil, salt and aromatic herbs to taste or proceed with a light marinade.

How to season grilled vegetables

Not to be underestimated is also the sauce for grilled vegetables. The ideal is to prepare a light marinade based on oil and garlic, to which chopped aromatic herbs or chilli pepper can also be added, while it is absolutely forbidden to add salt before and during the cooking of grilled vegetables. In fact, salt should only be added at the end of cooking to prevent the vegetables from dehydrating too much.

How to make grilled vegetables in the oven

Those who don't have the space in the garden for an outdoor barbecue can opt for cooking in the oven. Also in this case it is advisable to prepare a marinade based on oil, minced garlic and parsley with which to flavor the vegetables .

  1. Wash and cut all the vegetables into slices.
  2. Arrange them on an oven tray.
  3. Sprinkle with the marinade and bake in a preheated oven at 180°C for about 20-30 minutes .
