To prepare it you will need whole milk for a creamier ricotta, semi-skimmed for a drier one , and a coagulating agent. You can use both citric acid for food use, to be purchased online or in pharmacies, as well as white wine vinegar and lemon juice. In all cases the result will be excellent, worthy of a dairy.

How to prepare the ricotta recipe with the Instant Pot

  1. Pour the milk, preferably at room temperature, into the container of the pan. Add the salt and mix well until it dissolves.
  2. Start the Instant Pot with the Yogurt function and adjust it until the word Boil appears on the display (the Instant Pot shows the instructions on the display in English).
  3. Then remove the pot from the container, placing it on a cloth and add the citric acid dissolved in the water or the lemon or vinegar.
  4. Mix for about 5 minutes until flakes begin to appear on the surface, a sign that the ricotta is starting to form.
  5. Cover the pot with a cloth and then with a lid and let it rest for 30 minutes .
  6. Filter everything by placing a clean dish towel washed without softener in a colander and let it strain for a couple of hours.
  7. Your ricotta is now ready to be placed in the appropriate molds and placed in the refrigerator for a couple of hours before being used.
