Homemade jellied meat

jellied meat

Jellied meat is not only a great way to preserve meat, but also an idea for an unusual appetizer.

Without naming names, everyone knows at least one very famous jellied meat brand. This meat appetizer, often served directly as a second course when you're in a hurry, doesn't please everyone. Its particular consistency combined with its slightly retro charm make it a controversial recipe.

What not everyone knows is that canned meat can be prepared at home and, even if the process takes a little time due to the long cooking times of the meat , the result is truly excellent. Opting for home jellied meat preparation allows you to choose quality raw materials. Serve it as an appetizer on the most important occasions and you will amaze your guests in a truly unique way.

How to prepare jellied meat recipe

  1. First, combine the meat (preferably a part of the muscle) and the vegetables in a sufficiently large pan. Cut them into not too small pieces because they will have to cook for a long time and remove the excess fat from the meat.
  2. Add two pinches of salt, cover with water and cook for about 2 and a half hours , then turn off the heat and leave to cool.
  3. At this point, recover the meat which must be very tender and shred it with your hands . Transfer it to a bowl and season with lemon juice, freshly ground pepper and more salt if needed.
  4. Filter the broth through a fine-mesh strainer lined with a clean cloth (at least twice ) and set aside.
  5. Soak the isinglass in cold water then dissolve it in the broth before adding everything to the meat and placing it in a large mold or single-portion moulds.
  6. Leave to harden in the refrigerator for at least 3-4 hours before turning the jellied meat out of the mold.
  7. Once ready, some white fat accumulations may have formed on the surface, which we recommend removing delicately with a fork.
  8. To unmold it is very simple, immerse the container in a pan of hot water for a few seconds, you will see that the jelly will come off in an instant and without effort.

As you can see, this is a quick recipe without prejudice to the cooking time of the meat. However, no one is stopping you from preparing jellied meat using leftover boiled meat of any type, including chicken. Here, now you have discovered how to preserve meat in a simple and tasty way!
