Japanese cuisine is not just sushi and lovers of the land of the rising sun know it well. Among the delicious recipes that this land gives us there is one that you should absolutely try: okonomyaki. It literally means okonomi that is what you want, grilled yaki and is a kind of Japanese pancake made up of various ingredients.
Basically , eggs, flour and cabbage cannot be missing, to which meat, fish or other vegetables are added from time to time. Also known as Osaka pizza, okonomyaki is made on hot cast iron plates known as teppan sometimes placed directly on the diners’ table. Everything is then served with the famous Japanese mayonnaise , okonomyaki sauce and the famous katsobushi, dried tuna flakes. How to make okonomiyaki with the original recipe
- Break the egg into a bowl, add the flour and mix well. Then add the dashi, or plain water and mix well until you get a batter .
- Slice the savoy cabbage and spring onion, peel the carrot and cut it into julienne strips, then add the vegetables to the batter together with the shrimps .
- Mix well and pour everything into a well oiled pan of 20 cm in diameter . Cook with the lid on for 5 minutes, then turn and continue cooking on the other side for 5 minutes .

- Transfer the okonomyaki to a plate and top with the mayonnaise, okonomyaki sauce and katsobushi flakes.
