A delicious condiment for pasta, fish, meat, bruschetta and more: this is how confit tomatoes are made.

We often hear about confit tomatoes, especially among true cooking enthusiasts and on restaurant menus. They are tomatoes cooked at a low temperature in the oven, after being sprinkled with sugar , salt, oil and a few other ingredients: the result is a fantastic caramelized effect!

The term confit (pronounced confì ) is of French origin and means to preserve , and is intended for all preparations that require this type of long cooking in the oven.

Their flavor is totally different from that of sun-dried tomatoes, both due to the presence of sugar, which caramelises everything, and due to less prolonged cooking, which leaves the tomatoes softer . For this recipe cherry tomatoes are used, but if you want you can also try with other types.

How to make caramelized cherry tomatoes in the oven

1. Start washing the cherry tomatoes thoroughly. Dry them on a clean cloth and then cut them in half.

2. Line a baking tray with baking paper and place the tomatoes with the inside facing up.

3. At this point, you can sprinkle the surface of the cherry tomatoes with the sugar, the very finely minced garlic, the salt, plenty of dried oregano , the thyme and a grind of pepper. For a lighter result you can also just place a few cloves of poached garlic here and there on the pan.

4. Complete by dressing the tomatoes with a generous drizzle of extra virgin olive oil.
5. Put the tomato tray in the oven at 140°C, static oven : the expected cooking time is around 2 hours (90 minutes could be fine but this will depend on the size of the tomatoes). The important thing is that the tomatoes wither without drying out too much.
6. When they are ready, remove them and let them rest for a couple of minutes. Serve your confit tomatoes on bruschetta , as a side dish or to season pasta and main courses: enjoy your meal!
