How to cook fried eggs

  1. Take a non-stick pan or, in the case of multiple portions, a pan. The small pan is more suitable because the gathered and close edges help maintain the correct cooking temperature .
  2. Pour a knob of butter and let it melt slowly over a medium-low heat, or if you prefer, grease the surface with a drizzle of oil.
  3. When the butter has completely melted, rotate the pan so that the fat covers the entire bottom.
  4. Gently pour the egg into the pan. The right time is when the butter has started to sizzle.
  5. Continue cooking until the egg white is completely set and is no longer slimy and translucent , but don't insist on cooking too much, otherwise the egg will burn!
  6. Salt it only at the end of cooking and then serve it.

5 tips for making a perfect pan-fried egg

1. Do not break the egg directly into the pan, but into a small bowl. There are two reasons: if a piece of shell falls out it is easier to recover it , furthermore, you can open the egg in the bowl with greater peace of mind and therefore with due care so as not to break the yolk.

2. Cooking is fundamental in this recipe: 3-4 minutes should be enough , and this is because the real recipe requires that the egg white be cooked , but not burnt, and the yolk soft . Obviously, if your tastes are different, cook it more!

3. With a non-stick pan, the egg should come away from the bottom on its own, or with a light flick of the wrist, otherwise help yourself gently with a spatula .

4. If suitable, you can also serve the egg directly in the pan. In this case it must not be non-stick , otherwise the diner could damage the bottom with the knife.

5. You can use oil instead of butter , in fact it is often more suitable given that the former has a higher smoke point (from 210° C) than butter (130°) and therefore it is more likely to burn the external white if you don't pay attention. Unless you use clarified butter, which has the highest smoke point (250°C).

How to serve fried egg

Salt the fried egg, but only on the white, not on the yolk. The yolk is already tasty on its own, and doesn't need salt. Pepper the entire egg, preferably with freshly ground black or white pepper . Serve hot, as the fried egg loses its flavor as time passes and cools.

A nice idea could be to remove the edges from a slice of loaf of bread, spread it with a light layer of butter, toast it in the oven at 180°C for 3-4 minutes, put it on a plate and place the egg.
