How to make homemade nougat?

Nougat ingredients and recipe: a simple preparation, perfect for the Christmas holidays and for those who want to prepare nice homemade gifts!

Today we will explain how to prepare the classic nougat with hazelnuts, one of the sweet symbols of Christmas and holidays. The origins of this dessert are not well defined, but it is known for certain that it was prepared on the occasion of the wedding of the Duke of Milan Francesco Sforza and Bianca Maria Visconti.

Making it at home is quite simple, but remember that the more you cook it , the harder it will be. Now let's see all the steps of the recipe!

How to make soft nougat with the classic recipe

  1. First, toast the hazelnuts and almonds in a preheated oven at 200°C for 10 minutes .
  2. Pour the honey into a saucepan and cook until it becomes fluid .
  3. Separately, in another saucepan, pour the sugar and 3-4 tablespoons of water and leave on the heat until the sugar has completely dissolved and has reached a temperature of 112°C (you will need a kitchen thermometer, otherwise wait until that the foam is created but without this turning dark or starting to solidify and it will be ready).
  4. Whip the egg whites until stiff, then gently pour the hot syrup over them, continuing to beat the egg whites so that they do not disassemble.
  5. Then gradually add the honey, stirring gently with a spatula from bottom to top.
  6. When you have obtained a fluid and sticky consistency, add the dried fruit (whole or coarsely chopped).
  7. Stir to amalgamate everything and pour the mixture thus obtained into a silicone mold lined with food wafer . If you can't find the food wafer, you can still prepare the nougat by letting it rest in a lightly oiled silicone mould.
  8. Let it cool completely before cutting your nougat!

This Christmas dessert can also be prepared with other dried fruit such as almonds, pistachios or walnuts.

storage

Keep it for about 1 week in a cool, dry place, away from sources of light or heat. Better if inside a food container with a lid.
