How to make the classic peperonata

So let's start with the pan-fried peperonata recipe, the traditional one !

  1. Start by peeling the onions, then cut them in quarters and slice them roughly.
  2. Place a large frying pan on the heat, heat plenty of oil (7-8 tablespoons will do) and add the garlic and onions.
  3. Simmer over medium/low heat for 15 minutes and in the meantime clean the peppers, remove the seeds and internal filaments and cut into sticks.
  4. Add the vegetables to the pan, mix well over high heat for about ten minutes, then remove the garlic, add salt and reduce the heat.
  5. Add the tomato puree and about 1 glass of water, add the sugar , mix well and lower the heat.
  6. Cook for about 30 minutes with the lid on, at the end of cooking add salt and pepper as needed.

Preparation of baked pepperoni

Here's a lighter version of the side dish, thanks to baking. Let's see the steps !

  1. For this preparation, however, start by washing the peppers well , then cut them in half, remove the stalk and the internal seeds then cut them into sticks of the same size.
  2. Peel the onion and slice it. Transfer the peppers and onion into a baking dish with the salt, oil, pepper and aromatic herbs.
  3. Bake in a preheated oven at 180°C for 30 minutes . 10 minutes from the end of cooking, add the tomato diluted with half a glass of hot water and the sugar. Remove from the oven and serve.

How to make peperonata with the Thermomix

We conclude with the preparation using the Thermomix. Ready for a super-fast recipe ?

  1. Chop the onion in the clean mixing bowl for about 5 seconds. at speed 7.
  2. Add the olive oil and cook for a couple of minutes at 100°C, vel. soft.
  3. Clean the peppers, wash them, cut them into strips and then put them in the mixing bowl. Cook 10 min at 100 °C anticlockwise, always vel. soft.
  4. Add the tomato , sugar, salt, pepper and cook for 15 min. always at 100 °C Counterclockwise, vel. soft.
  5. Put everything in a baking dish and let it rest in the fridge.

A valid tip for all preparations: if you want to prepare the recipe for sweet and sour peppers, all you have to do is add 10 minutes from optimal cooking three tablespoons of sugar and 5/6 tablespoons of white wine vinegar.
