How to make spaghetti omelette


Spaghetti Frittata

The spaghetti omelette is an excellent solution for using leftover spaghetti, and is "mandatory" for the Easter Monday trip.

The spaghetti omelette is so good that we don't have to wait for any leftover spaghetti to prepare it. However, it can be prepared with leftover spaghetti with any seasoning. Just make sure that the pasta sauce pairs well with the ingredients you use for the omelette.

In the recipe we used smoked provola and bacon, if you prefer, you can also use their sweet versions. Furthermore, you can replace cheese and salami as you like, for example you can use fontina and salami. Be careful, the weight of the spaghetti is when boiled, not when dried.

Preparation of the spaghetti omelette

  1. Wash the parsley, dry it well with kitchen paper and finely chop the leaves.
  2. Cut the smoked scamorza into cubes about one centimeter in size.
  3. Cut the smoked bacon into small cubes.
  4. Take a large bowl and crack the eggs into it. Beat them lightly , then add parsley, grated parmesan, smoked scamorza, smoked bacon, milk and pepper. Unsalted, the ingredients are already very tasty, and even the pasta already has at least its cooking salt, if not its original seasoning.
  5. Mix very well. Add the spaghetti and mix gently .
  6. Take a large non-stick pan and pour in the EVO oil. Place it on a medium heat and bring the oil to temperature .
  7. Pour the egg and spaghetti mixture and distribute it evenly in the pan. Now you no longer have to mix, every now and then just give the pan a few taps to detach the omelette from the bottom.
  8. Cover and cook for ten minutes over medium-low heat.
  9. Now you have to turn the omelette, and you can do it with the help of the lid. When turning, press the lid very firmly on the pan using a kitchen glove or a clean cloth to avoid burning yourself.
  10. Put the omelette back in the pan and cook it without a lid for another five minutes . Every now and then give the pan a few blows to detach the omelette from the bottom.
  11. Remove from the heat and place the omelette on a plate. You can enjoy it warm or cold. In many regions of Italy it is the typical picnic dish, especially on Easter Monday.

storage

We recommend storing the fried spaghetti in the refrigerator for a maximum of 1-2 days , well covered in cling film. We do not recommend freezing in the freezer.
