Who doesn't love savory pies? They are good and simple to prepare and are the dinner saver par excellence for many Italian families. However, if you follow a vegan diet, it is not always easy to bring to the table a rustic dish that at least partially resembles the traditional ones. Today we thought we'd offer you this simple and good vegan savory pie with asparagus.

In fact, let's not forget that vegan recipes are as good as their omnivore equivalent, but they are lighter and healthier . Totally cholesterol-free, this savory pie with asparagus will win you over at the first bite!

How to prepare the vegan savory asparagus pie recipe

  1. First, prepare the asparagus . After washing them well under running water, flex the final part of the stem so as to break it. Place them lying down in a large pan and cover them loosely with water. Salt lightly and cook them until they are tender . You can check if they are done by simply poking them with a fork.
  2. Let them cool, then blend them – all except 5 – together with the tofu and soy milk. You should obtain a smooth cream. Season with salt , add the curry , black pepper and fresh thyme leaves.
  3. Unroll the vegetable puff pastry (alternatively you can prepare a puff pastry without butter ) and transfer it into a round mold with a diameter of approximately 24 cm , keeping the baking paper.
  4. Pour the filling made of tofu and asparagus, after having pricked the bottom with the tines of a fork, and place the asparagus that you have kept aside. Fold the edges and cook the vegan savory pie at 200°C for 30 minutes . Let it cool before serving.
