Preparing risotto is very satisfying: it seems incredible how much flavor rice grains acquire if pampered during cooking and seasoned properly. Turmeric risotto is a preparation that allows you to bring to the table all the goodness of rice combined with the spicy flavor of this root with countless properties.

However, don't think of turmeric as the poor man's saffron (as it is sometimes defined): its strong flavor makes it an important ingredient, perfect for flavoring a dish.

How to prepare turmeric risotto

  1. First, finely chop the onion . Fry it in a thick-bottomed pan with two tablespoons of oil.
  2. When it has become transparent, add the rice and toast it for a couple of minutes.
  3. Add the white wine and when all the alcohol has evaporated start adding the broth.
  4. To obtain the perfect risotto, the broth should be added one ladle at a time, waiting until the previous one has been absorbed. In this way the rice will release the starches during cooking and become creamy.
  5. When almost cooked, add the turmeric. It is important to wait until the last moment to add turmeric powder because if subjected to heat it tends to lose some of its properties.
  6. Cream the risotto with vegan butter or veg Greek yogurt . The acidic flavor pairs perfectly with turmeric, creating a dish with oriental aromas.

If you want to create an even richer version, we recommend you try the courgette and turmeric risotto . If you want to be more daring , try adding ginger to the risotto: just add a finger of it, finely grated, together with the sautéed onion!

This risotto is delicious if consumed at the moment, however you can also keep it for a few hours in the refrigerator if you are unable to finish it in one sitting (maximum 1 day). We do not recommend freezing.
