How to preserve peppers in oil? Let's see the recipe for delicious and tasty preserves, perfectly suitable for this type of vegetable!

Vegetables in oil are fantastic and, for all lovers of preserves, today we prepare one of the simplest, but also the best ever: peppers in oil! For this recipe, all you have to do is get some tasty and excellent quality vegetables , boil them with vinegar and water and keep them in practical jars. But don't worry, we also want to share the version with peppers cooked in the oven or on the grill.

We have chosen red peppers but nothing prevents you from making the same recipe but with mixed peppers: they will be equally delicious in oil!

How to make peppers in oil: original recipe

  1. To prepare the pepper preserve, start by washing the vegetables thoroughly , then dry and clean them by removing the stalk, the white filaments and the seeds.
  2. Cut the vegetables into strips and in the meantime bring a pot to the boil with 1 liter of white wine vinegar and half a liter of water .
  3. When the peppers are all cut and the liquid is boiling, add salt and pour the peppers into strips into the pan.
  4. Let the liquid boil again, then cook for 3-5 minutes .
  5. Once the time has passed, drain the vegetable strips and let them dry completely (on kitchen paper but better if a clean cloth).
  6. When the peppers are completely dry, go on to sterilize the jars and then prepare the pickled oil.
  7. Put the oil, garlic and aromatic herbs on the bottom, make a first layer of peppers then season again with the herbs, pepper, garlic and oil. Continue in this way and finish by adding the oil necessary to completely cover the vegetables.
  8. Close the glass jars and pasteurize them: boil them for 20-30 minutes , then turn off the heat , remove them and let them cool before placing them in the pantry.
  9. If, after a few hours, the peppers are no longer completely immersed in the oil, you will have to open the jars and add liquid, and then pasteurize them again by boiling them in hot water.

If you want to make other preserves for the winter, you can also prepare stuffed peppers in oil : a more delicious variant which, according to your taste, includes the addition of minced tuna, anchovies and capers as a filling , for an inebriating flavour. .

How to preserve baked (or grilled) peppers in oil

There is also another, more digestible method for preserving peppers in oil, and this involves cooking them in the oven:

  1. After carefully washing the peppers, arrange them whole on a lined baking tray and bake in a preheated oven at 250°C for 30 minutes, turning them occasionally. Remove them from the oven and place them immediately inside a plastic food bag.
  2. Close the bag and let it rest for 20 minutes: thanks to this little trick, removing the skin will be easier.
  3. The same goes for grilled peppers in oil: cook them well on a grill and when they're soft put them in the special bag.
  4. Peel the peppers, remove the stalk, the seeds and the internal filaments. Cut the vegetables into strips and continue with the preparation of the pickled vegetables.

storage

If the vacuum packing (and pasteurization) has taken place completely, you can keep your jars of peppers in oil for up to 18 months from preparation , but remember to leave them in a dry place, away from sources of light or heat. Once you have opened a jar, keep it in the fridge for a maximum of 1-2 months, making sure that the vegetables are always covered in oil.
