If you love delicious recipes, don’t miss the Parisian cake!

Let’s find out how to prepare homemade Parisian pizza starting from the dough following the original Neapolitan recipe.

La parigina is a rustic Neapolitan pizza made up of a pizza dough base , a filling of tomato , provolone and ham and a last layer of puff pastry topping. To the detriment of the name, the Parisian pizza was born in Naples and, as always, going back to the origin of the dish is rather complex. Certainly the recipe was codified during the 70s by the rosticceria Sant’Antonio di Afragola , but according to some, the French influence lies precisely in the presence of the puff pastry covering, invented in France at the beginning of the nineteenth century by Marie Antoine Carême .

The more patriotic, however, will prefer to think of it in the Neapolitan way, imagining that Parisian is a word deriving from pa ‘regina , that is, for the queen , in reference to an undefined monarch who reigned over the two Sicilies. But let’s find out together how to prepare this typical Neapolitan product.

How to prepare the Parisian recipe

  1. To prepare the Neapolitan parisina, start with the basic pizza dough . Gather the flour in a bowl then pour in the lukewarm water in which you have dissolved the yeast and sugar. Start kneading and when it begins to take shape, add oil and salt.
  2. Finish working on the pastry board until it is smooth and homogeneous then put it to rise in the oven off with the light on until doubled. It will take about 2-3 hours.
  3. Then transfer it to a pan of about 25 × 30 cm lined with parchment paper and spread it well with your hands.
  4. Spread a layer of tomato puree, season with salt then spread the provolone and sliced ham.
  5. Cover with the puff pastry (if it is not big enough, roll it out with a rolling pin), pressing lightly along the edges, as if to tuck it up.
  6. Bake the Parisian focaccia at 200 ° C for about 30 minutes , then let it cool before serving.

We love these quick and easy recipes, so we recommend that you also try the pan pizza , perfect for family dinners.

The Parisian can be kept out of the refrigerator for a couple of days . We advise you to lightly heat it in the oven or on the plate before consuming it.
