The Parisian is a rustic Neapolitan pizza made up of a base of pizza dough , a topping of tomato , provola and ham and a final layer of puff pastry topping. Despite the name, Parisian pizza was born in Naples and as always, tracing the origin of the dish is rather complex. Certainly the recipe was codified during the 1970s by the Sant'Antonio rotisserie in Afragola , but according to some the French influence lies precisely in the presence of the puff pastry covering, invented in France at the beginning of the nineteenth century by Marie Antoine CarĂŞme .

The more patriotic, however, will prefer to think of it in the Neapolitan way, imagining that parisian is a word deriving from pa' regina , i.e. for the queen , in reference to an undefined monarch who reigned over the two Sicilies. How to prepare the Parisian recipe

  1. To prepare the Neapolitan Parisian, start with the basic pizza dough . Combine the flour in a bowl then slowly pour in the warm water in which you have dissolved the yeast and sugar. Start kneading and when it starts to take shape, add oil and salt.
  2. Finish working it on the pastry board until it is smooth and homogeneous, then leave it to rise in the oven with the light turned off until it doubles in size. It will take about 2-3 hours.
  3. Then transfer it to a baking tray of approximately 25×30 cm lined with baking paper and spread it well with your hands.
  4. Spread a layer of tomato puree, season with salt then spread the provola and sliced ​​ham.
  5. Cover with the puff pastry (if it is not large enough, roll it out with a rolling pin), pressing lightly along the edges, almost as if you want to tuck it in.
  6. Cook the Parisian focaccia at 200°C for about 30 minutes , then let it cool before serving.

storage

The Parisian can be kept out of the refrigerator for a couple of days . We recommend reheating it slightly in the oven or on the griddle before consuming it.
