Lamb cacciatore style: a delicious traditional dish with which you bring all the rustic flavors of the past to the table.

Lamb cacciatore is an inviting and appetizing dish. The tomato sauce invites you to sip, softens and sweetens this meat with a strong and decisive flavour. The olives complete everything: you can leave them whole or cut them into rounds, and if you want to give flavor to the preparation, choose the Taggiasca variety. Ready? Preparation of lamb hunter style

  1. Take a pan and pour a generous drizzle of oil inside together with a clove of garlic.
  2. Let it heat up, then add the pieces of meat to the pan and brown them on all sides for a few minutes.
  3. When the meat has browned on all sides , add the wine (white or red), keeping the heat high until all the alcohol has evaporated.
  4. While the alcohol evaporates, place the peeled tomatoes in a bowl and mash them with a fork , then lower the heat, remove the garlic clove and add the tomatoes, Taggiasca olives, rosemary and bay leaves.
  5. Add salt and pepper, mix well and leave to cook over low heat for about 15-20 minutes .
  6. When everything has dried, add a glass of boiling water (or broth), close with the lid and leave to cook for another 30 minutes .
  7. Once the time has passed, remove the lid and if a nice sauce has been created, turn off the heat and bring to the table.

storage

Store the lamb prepared following this recipe in the fridge for a couple of days in a tightly closed container . Reheat it in a pan, adding a drop of tomato puree if necessary.
