In many Italian regions there is no self-respecting Easter without some recipe with lamb. From ribs with meat sauce to baked ones, if you are looking for something simple and that doesn't require a lot of time in the kitchen, our advice is to try the baked leg of lamb. Served with potatoes , cooked directly together with the meat, it turns into a complete and tasty second course.

The preparation is really very simple and to enhance the natural flavors of the baked leg of lamb it is not necessary to use many ingredients. By focusing on simple flavors, such as those of Mediterranean aromatic herbs , and adding a boost of flavor with garlic, your finished dish will be superlative.

How to prepare baked leg of lamb with potatoes

  1. First of all, the marinating step is very important. Then place the meat in a baking dish and season it with salt and pepper , oil and chopped aromatic herbs (you can also decide to leave them whole).
  2. Massage the meat well and then move on to cooking.
  3. Place the leg on a baking tray and cook at 180° C in the lowest part of the oven.
  4. When the surface turns golden, open the door, turn it over and sprinkle it with white wine . Cooking times are approximately 2 hours , towards the middle of the time turn the meat again and, if it is too dry, moisten it with a ladle of hot meat broth.
  5. Once the time has passed, turn off the heat and remove the pan.
  6. We advise you to let the meat cool for about ten minutes before serving it.

You can also proceed with cooking by inserting potatoes cut into wedges and seasoning with salt, pepper and oil; but a lot will depend on the size of the leg. With a leg weighing approximately 2 kg we recommend inserting the potatoes approximately halfway through cooking and placing them all around the meat (the juices will give it a superlative flavour)

It's really a shame not to enjoy this dish as soon as it's ready, to fully enjoy the flavour, softness and juices of the meat that mix with the softness of the crunchy potatoes. If you have some left over you can always leave it in the fridge , once cold and in an airtight container, for a maximum of one day.
