Have you ever tried eating on the ground , surrounded by grass, nature and in the company of good friends or family? Having a picnic is just that: sharing and tranquility with the people closest to you . If you have never yet organized a lunch break surrounded by greenery, this is a good opportunity to give it a try. To create a perfect picnic, there are very few indications: a thermal bag or a picnic basket, a checkered tablecloth to lay on the ground, some provisions prepared for the occasion (preferably BIO) and one thing that must not be missing … many recipes for good, quick and easy picnics to make without skimping on taste.

If you're wondering what to cook for a great picnic, the answer is simple: you really can't miss the pasta salad ! Quick and simple to do, the limit to the variations are your tastes and your imagination. Here is our version.

Ingredients for 4 people:

  • 380 g of pasta
  • 3 cans of tuna
  • feta to taste
  • black or green olives to taste
  • green beans to taste (optional)
  • Salt to taste
  • pepper as needed
  • extra virgin olive oil to taste
  • lemon juice to taste
  • rocket to taste

First, cook your green beans in abundant salted boiling water until they are soft, then drain and set aside. Then cook the pasta in salted water, remembering to drain it al dente and leave it to cool completely inside or outside the fridge. Once the pasta is cold, season it with oil, lemon, salt and pepper and mix well. Add the tuna, whole olives, feta and rocket and mix everything again before serving.

This is just one version, if you don't like pasta salad you can also opt for the classic and timeless rice salad .

A classic "picnic food" is the savory pie! It will take you a moment to make it (and even less to finish it). You can take it to the picnic already portioned or leave it whole and then divide it just before enjoying it. Also in this case there are many versions, we offer you the savory pie with cheese and ham .

Ingredients for 8 people:

  • 1 or 2 rolls of puff pastry
  • 200 g of cooked ham
  • 200 g of mixed cheese
  • 200 g of cottage cheese
  • 1 egg
  • Salt and Pepper To Taste

First, turn on the oven at 200° C so that it is hot enough to bake the cake. Take a roll of puff pastry and unroll it into a 24 cm diameter cake tin (keeping the parchment paper to prevent the preparation from sticking). Prick the pasta with the prongs of a fork and pass on to the filling. Mix together the ricotta, the egg, salt and pepper, the cooked ham cut into strips or cubes and the mixed cheese. Pour everything into the savory pie. At this point you can close the cake with a second roll of puff pastry or leave it open and bake it in the oven for about 30 minutes.

Savory muffins are another winning choice among the picnic recipes that we want to offer you. Our recipe is for muffins with tomato and provola but, once you understand the simple procedure, you can also vary the fillings .

Ingredients for 6 people:

  • 250 g of 00 flour
  • 200ml of milk
  • 200 g of tomatoes
  • 200 g of provolone
  • 70 ml of seed oil
  • 2 eggs
  • 1 sachet of brewer's yeast
  • basil to taste
  • pepper and salt to taste

Start by pouring flour, milk, yeast, oil and eggs into a bowl. Mix everything well and correct with salt and pepper. At this point add the chopped tomatoes , the cubed provola and the basil and mix everything again. Pour the batter into a muffin mold or special pirotines, being careful not to fill them too much as they will rise during cooking. Put in the oven at 180° C for about 25 minutes . Remove them from the oven when they are golden brown and let them cool.

Traditional or with special combinations, a fruit salad is just what you need for a fresh and sugary picnic-style end of a meal. We offer you the version of ourexotic fruit salad , for a change. The advice is to keep it in a thermal bag and next to a block of ice so that it remains firm and good.

Ingredients for 4 people:

  • 2 dragon fruit
  • 1 melon
  • 1 mango
  • 1 kiwi
  • 1 lemon
  • 3 tablespoons of sugar

First take the pitaya and cut it in half lengthwise. Carefully extract the pulp so as not to break the outer casing and set it aside. At this point, cut the pulp into cubes together with the pulp of the melon, a ripe mango and the kiwi. Mix everything together in a bowl and sprinkle with sugar and the juice of one lemon. Mix well and leave to macerate for about 10 minutes . At this point you can "plate" your fruit salad directly in the pitaya "shells" or put it in a container with an airtight lid and divide it into small bowls if necessary.

In a self-respecting picnic, dessert cannot be missing. So why not choose delicious sweets cut into comfortable cubes? And if we told you that they are filled with chocolate …! We're talking about the traditional brownies , high in calories but essential in a self-respecting lunch.

Ingredients for 6 people:

  • 225 of dark chocolate
  • 220 g of butter
  • 130 g of 00 flour
  • 220 g of sugar
  • 20 g of bitter cocoa
  • 4 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt,
  • powdered sugar to taste

Start by melting the dark chocolate and butter in a double boiler. Mix them well together to form a smooth glaze and leave it aside for a moment. In a bowl , combine all the powders (00 flour, bitter cocoa, baking powder) and mix. Whisk the eggs with the sugar then add them to the chocolate glaze. Once this procedure has been done, also incorporate the powders and mix until a smooth and homogeneous compound is obtained, being careful not to disassemble the eggs (mixed from the bottom up). Pour the dough into a rectangular mold lined with parchment paper and bake at 180°C for about 30 minutes . After this time, take the cake out of the oven and let it cool completely. Once cold, cut it into squares and sprinkle with icing sugar .
