The starting point is a soft dough that is enriched with many colored sugared almonds , known to Americans as funfetti . Three layers of dough alternate with layers of a sweet butter cream , which covers the whole cake. Use the multi-colored coral also to cover the outside of the cake and you will have created a colorful and spectacular dessert. It is from this ingredient that the cake takes its name. With the right precautions, you will prepare a beautiful dessert that will catch everyone's eyes.

Preparation of the funfetti cake recipe

  1. Start with the dough, cut 150 g of soft butter into chunks and pour them into a large bowl.
  2. Add the granulated sugar and whip everything with an electric mixer, obtaining a frothy mixture.
  3. Add the eggs and continue to mix with the same tool.
  4. Sift the flour and baking powder and add them to the mixture; pour in the milk and stir vigorously.
  5. At this point, it's time for the colorful confetti. Pour 1 sachet of coral into the mixture and continue to mix, to distribute them evenly.
  6. Equip yourself with three circular molds, all with the same diameter – the 20 cm size is fine -, butter and flour them.
  7. Distribute the dough equally between the three molds. Cook one base at a time in a preheated static oven at 180 ° C for 20 minutes ; do not forget the toothpick test to verify that the dough is properly cooked, before taking it out of the oven!
  8. When the three bases are ready, focus on the cream. Take 280 g of soft butter, cut it into chunks and put it in a large bowl.
  9. Add the icing sugar and vanilla essence; whip with the electric whisk for 5 minutes, maintaining a medium speed.
  10. Once done, add the cream, a little at a time , while you work with the whisk to mix it as you go.
  11. When it is ready, put it in a pastry bag and proceed to the construction of the colorful cake.
  12. On a serving plate, place one of the bases; cover with a layer of butter cream. Proceed in this way, until you reach the third disc of dough.
  13. Cover the entire surface of the birthday cake, even the sides, with the cream and smooth with a spatula . Finally, decorate by covering the cream with another bag of colored sprinkles.
  14. If you have more time, you can also whip more cream and color it with gel food coloring, to create colored tufts on the surface.
