How to make the roasted cauliflower recipe

  1. First, remove the outer leaves of the cauliflower and wash it well under running water.
  2. Transfer it to a sufficiently large pot with 2 fingers of water on the bottom and cook for 5 minutes from boiling. This step is very useful for tenderizing the toughest part of the cabbage, that is the core and then speeding up cooking in the oven.
  3. Once this is done, cut it into slices of 1.5 cm thick parallel to the core and place them on a baking sheet lined with parchment paper.
  4. Finely chop the garlic, chilli and parsley and mix them in a bowl together with the grated lemon zest.
  5. Salt and pepper the slices of cauliflower, sprinkle them with a drizzle of oil (the ideal is to use an oil spray or a kitchen brush) and distribute the aromatic mixture .
  6. Bake in a preheated oven at 200 ° C for 30 minutes . Before taking out of the oven, make sure it is tender by piercing it with a fork.

Whole roasted cauliflower

To cook whole roasted cauliflower the procedure and the ingredients to flavor it are the same. The only difference is that the whole cabbage will be blanched for 10 minutes (instead of 5). As for the sauce, on the other hand, add a couple of tablespoons of oil to the aromatic mixture, brush the surface of the cauliflower well after placing it on a baking sheet lined with parchment paper and cook at 180 ° C for 45 minutes . To test the cooking you can use a long toothpick for skewers.

You can flavor the roasted cauliflower in the oven (whole or sliced), with the ingredients you prefer . Excellent paprika, curry, garlic powder and all aromatic herbs, fresh or dried, finely chopped.
