Savoy cabbage is a winter dish of Venetian cuisine usually prepared to accompany rich dishes such as ribs, sausages and other baked delicacies. The term literally means smothered cabbage with reference to the long cooking times that characterize the dish. In this way you will obtain tender and very tasty stewed cabbage, a rich dish that is really difficult to say no to.

The traditional Venetian recipe involves the use of lard in the early stages of cooking. To date, however, it has been completely replaced by oil, allowing the creation of a lighter but still very tasty dish. How to prepare the sofegae cabbage recipe

  1. Start by chopping the garlic, onion and rosemary with a knife and browning everything in a large pan with the oil.
  2. In the meantime , slice the cabbage, removing the toughest ribs. The ideal is to have strips about one centimeter wide.
  3. Add them to the pan, season with salt and pepper and leave to cook over low heat with the lid on until they are tender. Remember to stir from time to time and if necessary you can add a few tablespoons of water to facilitate cooking.
  4. Serve the cabbage piping hot as a side dish to your dishes.
