Today we will explain how to prepare pancakes with oat flakes, a delicious and very simple dessert to prepare. Oat flakes are a naturally gluten-free food and can be used in addition to yogurt, milk or savory soups or they can be used as flour as in the recipe we propose below. Remember to check that the products used are certified gluten-free to avoid dangerous contamination .

Preparation of gluten-free pancakes with oat flakes

  1. Place the oat flakes in the mixer and blend until completely pulverized . Pour the oat flakes powder into a large bowl, add the sugar, cornflour, baking powder and salt. Mix the dry ingredients then add the eggs and milk.
  2. Work with the whisk to obtain a homogeneous batter. Take a large non-stick pan or creperie, lightly grease the bottom with a little seed oil and pour a generous spoonful of batter for each pancake.
  3. Level the batter with the back of the spoon to obtain a rounded shape. Cook over medium heat and as soon as you see the batter start to bubble, gently flip the pancakes and complete cooking on the other side.
  4. Continue in this way until you run out of batter. Before serving, garnish the pancakes as desired : we used honey, bananas and dried fruit!

storage

Pancake batter can be stored for a maximum of half a day in the refrigerator, in a container with an airtight lid. Ready-made sweets can be stored in the fridge for a maximum of 1 day and well covered in cling film. We do not recommend freezing in the freezer.
