How to prepare the chicory and beans recipe

  1. First clean the chicory by removing the end of the stem and washing it thoroughly under running water. Be sure to remove any dirt residue.
  2. Then reduce it into chunks and blanch it in water for 10 minutes.
  3. Meanwhile in a pan heat the oil with the garlic clove . Add the chicory, a couple of ladles of water and cook over medium heat for 30 minutes, seasoning with salt.
  4. About 10 minutes before the end of cooking, drain the beans from the liquid and add them to the pan.
  5. Serve your side dish hot or at room temperature.

An even tastier variant is Calabrian chicory and beans. To prepare it, all you have to do is add a chilli pepper to the sautéed with oil and garlic and then proceed as per recipe. Lovers of strong flavors will love this dish very much. How not to mention broad beans and chicory : a rustic dish typical of the Apulian cuisine.


You can keep this side dish in the refrigerator for 2-3 days and eat it at room temperature or after heating it in a pan for a few minutes.
