These ingredients are the basis for the delicious recipe of Mediterranean aubergine rolls, perfect to serve as an appetizer or for a tasty vegetarian second course. Ideal to make in the summer season when aubergines are particularly fresh and tasty.

They are simple to prepare and, if you want to prepare them as a single dish, abound with the quantities because they will be snapped up in no time! The succulent, stringy morsels will give off an inebriating aroma characteristic of good cuisine that will transport you on a magical culinary journey.

Preparation of the recipe for eggplant rolls Mediterranean style

  1. Heat the garlic in a pan with the oil for 5 minutes over low heat. Then pour the tomato sauce and a clove of garlic. Add salt and pepper and cook for 15 minutes .
  2. Meanwhile wash and slice the eggplant with a mandolin.
  3. Grill the aubergine slices on a hot grill on both sides and gradually transfer them to a cutting board.
  4. When the tomato sauce is cooked, remove the garlic and spread the sauce with a spoon on the surface of the aubergines.
  5. Add a little chopped mozzarella, olives and a basil leaf to each slice.
  6. Roll up the stuffed aubergines and place them in a baking dish with the seam facing down . Cover the rolls with more sauce and a few pieces of mozzarella.
  7. Bake in a preheated static oven at 180°C for about 10 minutes .
  8. Remove from the oven and enjoy the warm and gooey rolls!

Add, if you like, also a sprinkling of Parmesan cheese in the filling and on the surface: it will make your rolls more au gratin. You can also use capers, onion and oregano to make some slight changes to the dish. As an alternative to the vegetarian version, you could add cooked ham for an even tastier taste!
