Do you know those delicious and very light cakes with the consistency of a cloud? Today we transform them into excellent paradise muffins, perfect alone or enriched with jam, hazelnut cream or custard and ideal for breakfast. Together with a cup of tea or milk they will make your day sweeter.

Preparing them is very simple but for the consistency to be the desired one you need to follow all the steps carefully . The ingredients are also fundamental and must be of quality because since it is a very simple recipe they will make the difference.

How to prepare the paradise muffin recipe

  1. First, separate the egg whites from the yolks and, with an electric whisk, whip the egg whites until stiff peaks form.
  2. Set aside and, again with an electric whisk, work the cold butter into cubes with the sugar and vanilla bean seeds.
  3. Add the eggs, flour and starch and mix everything well. Finally, add the egg whites, mixing from bottom to top to prevent the mixture from falling apart .
  4. Using a spoon, transfer the mixture into the muffin molds lined with the appropriate liners and fill them 2/3 full. Cook at 180°C for 20 minutes .
  5. In the meantime , prepare the cream. Place the sugar and cornstarch in a pan. Flavor with vanilla extract and honey and slowly pour in the milk, mixing with a whisk. Transfer everything to the heat and cook until it thickens. Let cool.
  6. Separately, whip the cream which must be very cold from the fridge and mix it with the cream with delicate movements from bottom to top. Transfer everything into a pastry bag .
  7. Once cold, fill them with milk cream. First make a hole at the base of the muffin using the back of a wooden spoon and then fill with the cream, trying to be generous. Serve with a sprinkling of icing sugar if desired.

The muffins will keep under a baking tray for 2-3 days , as soft as if they were freshly baked.
