Octopus in his water: how to prepare it with the Bari recipe

  2. Place the octopus in a pot, preferably terracotta, and add the cherry tomatoes cut in half, the sliced ​​onion , the parsley sprigs, the garlic clove and the oil .
  3. Cover the opening with baking paper then put the lid on.
  4. Turn the heat on to medium power and let the octopus cook for 40-45 minutes. The cooking time varies according to the size of the fish but you can always check the progress by pricking the meat with a fork: it should be very tender.
  5. Turn off the heat and let the octopus cool for at least half an hour before serving.
