Onion farfrittata is a simple but very tasty dish. Nutritious, this tasty recipe is prepared with chickpea flour and without eggs, also adapting to a vegan diet.

The easy recipe for fresh onion frittata is ready in just a few minutes. All you need is to create a dough with chickpea flour and water, to which you add the much-loved onions. The main ingredient gives flavor and a sweet aftertaste to this second course. A very nutritious and light preparation, which does not involve the use of eggs. For this reason, it is also recommended for those who follow a vegan diet or have particular intolerances. To be fried strictly in a pan, it is also excellent if cooked in the oven.

Preparing the recipe for the onion frittata

  1. Start by pouring the chickpea flour (in a well) into a bowl.
  2. To this, add the water little by little . In the meantime, mix with a hand whisk to combine everything.
  3. Season with a pinch of salt and pepper.
  4. After obtaining a homogeneous mixture without lumps, cover with transparent film and leave to rest for at least 2 hours . Stir this batter from time to time.
  5. Wash and peel the onions. Cut them into very thin slices.
  6. Fill the bottom of a pan with oil. Add the onions and season with a pinch of salt.
  7. Simmer over low heat until they fall apart.
  8. After the resting time, add the onions to the batter. Mix to incorporate them.
  9. Take a large, non-stick pan and pour in just enough oil to fry the omelette.
  10. Place on the stove over a very low heat and then pour the mixture into the pan. Cook for 15 minutes , just enough time for it to solidify.
  11. Turn it out onto a plate and drop it back into the pan to fry the other side. Cook for another 10 minutes .
  12. Once finished, turn off the heat and transfer to a serving plate to serve.

To cook this onion omelette in the oven, all you need to do is grease a baking tray. Pour the batter into it with the onions incorporated. Cook in a preheated oven at 200°C for 25 minutes . When the surface is golden brown, you can remove from the oven and serve.

storage

You can also prepare this special chickpea omelette with onions in advance and heat it in the microwave. To preserve it, keep it in the fridge for a maximum of 1 day , reheating it if necessary.
