Roasted artichokes in a pan with olives and lemon-scented feta: a tasty and rich in flavor side dish but easy to prepare. Here is the recipe!

Today we offer you a simple side dish to prepare but rich in taste: roasted artichokes. Not the simple artichokes though, since in this recipe they are cooked in a pan with shallots, lemon and olives. Everything is then enriched with crumbled feta and added at the end of cooking the artichokes. If you don’t like feta you can safely omit it.

Preparation of artichokes roasted in a pan

  1. To prepare the artichokes in a pan with feta and olives, start by cleaning the artichokes: remove the hard outer leaves and the upper part of the tips then put the artichokes to soak in water and lemon juice to prevent them from blackening in contact with the air.
  2. Peel the shallot and cut it into wedges.
  3. Now let’s see how to cook the artichokes: in a saucepan with low sides or in a pan, heat a couple of tablespoons of oil, brown the shallot then add the drained and cut into pieces artichokes .
  4. Continue adding the olives, thyme, a pinch of salt and pepper.
  5. Mix then wet with a glass of water.
  6. Continue cooking in order to dry the liquids then add the second lemon cut into slices.
  7. Continue cooking for another ten minutes then turn off the heat, add the crumbled feta and serve. Enjoy your meal!

We recommend consuming them within 1-2 days of preparation. You can keep this easy side dish in the refrigerator, inside a container with an airtight lid. We do not recommend freezing in the freezer.
