Try the pan-fried focaccia stuffed with instant yeast. A soft, oven-free focaccia filled with ham and cheese.

Pan-fried focaccia is a great way to prepare a quick and delicious dish. In fact, the presence of instant yeast in the dough allows us to skip the long leavening step.

As if that wasn't enough, today's pan-fried focaccia recipe is stuffed : when cut, a stringy filling of ham and cheese will make your taste buds jump for joy (and you won't have to give up the goodness of focacci, even if you have limited time).

The pan-fried focaccia is truly amazing, perfect for satisfying last minute cravings . However, you should not expect the classic consistency of focaccia but rather a dough similar to Arabic bread.

How to prepare focaccia in a pan with instant yeast

  1. First, put the flour in a bowl. Then add the water, yeast, oil and finally the salt. Knead quickly with your hands to form a smooth and homogeneous dough .
  2. Divide the dough into two equal parts and, using a rolling pin, roll them both out to a thickness of 3-4 mm.
  3. Stuff the first disc with slices of ham and diced cheese.
  4. Then close it with the second disc of dough, sealing the edges well with your fingers or a fork.
  5. Oil a non-stick pan with a diameter of approximately 24 cm , turn on the heat and transfer the focaccia to the pan.
  6. Pour a drizzle of oil onto the surface of the rustico, then cover the stuffed focaccia with the lid, and cook for about 5-7 minutes over low heat , then turn the focaccia over and proceed in the same way to cook it on the other side. To turn it over, use the lid, turn the focaccia over and put it back in the pan, sliding it gently .
  7. Once ready, let it cool for a few minutes before cutting it. Try it also in the gluten-free version!

This stuffed focaccia is delicious if eaten immediately, alternatively you can store it for a maximum of 1 day in the refrigerator well covered in cling film or in a container with an airtight lid. If you used fresh ingredients you can also try freezing it in the freezer.
