How to prepare the skillet potato cake recipe

  1. First, wash the potatoes and cook them in their skin, starting with cold water, until they are tender. The time varies depending on the size of the potatoes from 24 to 45 minutes. To speed up the recipe, however, you can also peel them, cut them into pieces of about 3 cm and boil them in plenty of salted water. In this case it will take about 20 minutes .
  2. Once tender, mash them with a fork and transfer them to a bowl to cool.
  3. Add the egg, parmesan, a pinch of salt and the breadcrumbs and mix everything quickly.
  4. Oil a 24 cm diameter non-stick pan and spread half the mixture on the bottom, pressing with your hands.
  5. Distribute the cheese and sliced ​​ham, leaving just 1 cm around the edge, then cover with the leftover potato mixture, taking care to seal the edges well.
  6. Cook over medium-low heat for 10 minutes then, using a lid, turn it over and continue cooking for another 10 minutes.
  7. Transfer to a plate and serve while still hot and stringy.
