Pan of baked vegetables, for a very easy and light side dish


Baked vegetables

Baked vegetables are a delicious side dish to combine with main courses of meat or fish.

Very few ingredients are enough to prepare a side dish of baked vegetables, simple but rich in taste and flavour. Spring onions, corn cobs, wild asparagus, carrots and fennel are the main ingredients of this side dish that you can combine with both meat and fish main courses. This is obviously just a basic recipe and you can replace all or some of the ingredients proposed with your favorite vegetables.

Preparation of mixed baked vegetables

  1. To prepare the roasted vegetables, start by peeling and preparing all the vegetables. You can cut them into slices, cubes or strips, it depends on your taste . Just remember to remove the outer part of the onion, peel the carrots, remove the high beard of the fennel and the seeds and the white inner part of the pepper.
  2. Transfer all the vegetables into a baking dish lightly greased with oil, add salt and pepper and finish with a drizzle of olive oil and a handful of aromatic herbs to taste.
  3. Bake in a preheated oven at 180°C and cook for 40 minutes , occasionally, if necessary, add a few tablespoons of vegetable broth or water to prevent the vegetables from drying out during cooking. Remove from the oven and serve the grilled vegetables immediately. Enjoy your meal!
