  1. Before starting with the procedure, immerse the healthy clams in a bowl full of cold water and coarse salt. Soak them for about 2 hours .
  2. After this time, drain and wash them under running water. Then, put them in a bowl.
  3. Remove the central stem from the broccoli, which is harder, and divide the florets ; wash them under cold water.
  4. Fill a saucepan with water, add salt and bring to the boil on the stove; at this point, immerse the vegetables in it and cook for about 7 minutes .
  5. Subsequently, pour 3 tablespoons of oil on the bottom of a non-stick pan and place a clove of garlic.
  6. Brown over moderate heat, then add the chilli pepper and broccoli. Sauté in the pan for a few minutes.
  7. Take another pan and pour another 3 tablespoons of oil with another clove of garlic. Add the clams, put the lid on and cook over medium heat.
  8. When the shells are all open, you can blend with the white wine . Once the liquid has evaporated, switch off.
  9. Transfer the clams to the pan containing the broccoli. Strain the shellfish liquid and add it a little at a time to the sauce, while it is cooking over low heat. It only takes a few minutes for the flavors to blend.
  10. Fill a saucepan with water, add salt and bring to a boil on the stove. When it boils, dip the pasta and cook over medium heat for the required time.
  11. Then, drain the pasta and add it to the saucepan with the sauce. Skip it all for a few minutes. The first course is then served!
