How to prepare the peach semifreddo recipe

  1. First, peel the peaches and cut the pulp into cubes. Place it in a pan together with the granulated sugar and leave to cook for about ten minutes. Blend with an immersion blender and let cool.
  2. Separately, with an electric whisk, whip the cream with the spreadable cheese and the icing sugar until it thickens.
  3. Add the peach puree, stirring gently from bottom to top.
  4. Pour the mixture into a plumcake mold lined with cling film (or into single-portion silicone molds) and place in the freezer for at least 6 hours.
  5. bring it back to room temperature for at least half an hour and serve, decorating as desired with crumbled amaretti biscuits.

For a lighter dessert you can replace the spreadable cheese with Greek yogurt , even peach yogurt.

Peach semifreddo with eggs

It is also possible to make a version of this semifreddo with eggs. The only precaution is to pasteurize them before inserting them into the mixture to avoid health risks. In this case, dissolve the sugar in 60 g of water and bring everything to 121°C . Whip 120 g of egg whites , adding the syrup as soon as they begin to thicken. Then mix in the whipped cream with the icing sugar, the cheese or yogurt and the peach puree. Transfer to the plumcake mold and leave to harden in the freezer for 6 hours.
