We prepare a very soft pear and yogurt cake without butter, a perfect dessert for breakfast or a snack.

If you are looking for an easy dessert, the pear and yogurt cake is the recipe for you. In fact, to prepare it you do not need great skills , since it is one of those recipes where it is sufficient to mix all the ingredients in a bowl, pour into the mold and cook.

Since it is a light dessert without butter, it is also perfect for breakfast or a snack . In short, you will not feel too guilty if the first slice is followed by a second! Not to mention the fact that it is very easy to customize not only by replacing the plain yogurt with a flavored one, perhaps with vanilla, but also by preparing it without eggs and thus making it a dessert suitable for vegans.

How to prepare the recipe for the pear and yogurt cake

  1. Peel the pears, core them and cut one into thin slices and one into chunks. Season both with lemon juice to prevent them from blackening.
  2. Separately, in a bowl, work the eggs and sugar with the electric whisk until they are swollen and frothy. Add the yogurt and the seed oil, always with the whips in action, and finally the flour sifted with the baking powder.
  3. Once you have obtained a homogeneous mixture, add the pears cut into small pieces, mixing with a kitchen spatula from top to bottom. Then pour everything into a 24 cm mold lined with parchment paper.
  4. Spread the sliced ​​pears on the surface and cook at 180 ° C for 45 minutes doing the toothpick test before taking them out of the oven.
  5. Serve once cold, decorating as desired with icing sugar.

We know that among you there are incurable gluttons so we thought of the pear and yogurt and chocolate cake just for them. It is prepared by replacing 20 g of flour with 20 g of unsweetened cocoa and, if you really want to treat yourself, also adding 60 g of chocolate chips.

For those who follow a vegan diet, we have transformed the recipe and made an egg-free pear and yogurt cake. In this case, since it is a simple dessert, it is sufficient to replace the eggs with a second jar of yogurt (also vegetable) mixed with a tablespoon of corn starch. The recipe remains unchanged but before removing it from the oven make sure it is well cooked.

This cake can be kept out of the fridge, well covered under a cake bell, for 2-3 days . Be careful if it is too hot because the fruit could spoil.
