A first course with strong and decisive flavors, colorful and cheerful: pasta with peppers is simple and intriguing . Have you ever made it with your own hands? It's perfect for those summer days (when vegetables are tasty) when you want the best results with the least effort.

As for pasta, you can choose the one you prefer: penne, spaghetti, fusilli, everything is fine especially if you choose top quality vegetables. Here is the recipe for pasta with peppers

Preparation of pasta with pepper sauce

  1. First, put a pot full of salted water on the fire and bring it to a boil, so when it's time to cook the pasta, the water will boil .
  2. In the meantime, wash the peppers and tomatoes thoroughly under running water.
  3. Remove the stalk, seeds and internal filament from the peppers, then cut them into strips. Heat a little oil in a non-stick pan with a clove of garlic. After a couple of minutes, add the peppers to the pan.
  4. Add a ladle of water and let them cook for about 15 minutes before adding the halved cherry tomatoes.
  5. Cover the pan and cook for another 10 minutes. Meanwhile, throw the pasta in the pot and drain it al dente, directly into the pan with the pepper sauce.
  6. Let everything soak up the flavors and mix for a couple of minutes before plating and garnishing with a few basil leaves.
  7. Complete, if desired, with grated cheese and serve with a good glass of red wine. Enjoy your meal!

The advice is to enjoy it immediately after preparation, but if you have any leftover you can keep it in the refrigerator for a couple of days.

Variations of pasta with peppers

If you don't like the idea that the vegetables are in pieces, you can blend the vegetable sauce: the pasta with pepper cream will be just as good (and much creamier).

For a creamier taste, some prefer to prepare pasta with peppers and cream: with a simple addition, the taste will change a lot. It could be a nice alternative for those diners who don't particularly like the taste of peppers. To those who love them, however, we leave all our recipes with peppers !


We recommend consuming this easy and substantial first course at the moment. You can keep it for up to half a day in the fridge and heat it in the oven or microwave before enjoying it. We do not recommend freezing in the freezer.
