Piedmontese antipasto: the original recipe of mixed vegetables in glass

The Piedmontese antipasto will come to your rescue when you don't have time to cook. A proposal of delicious vegetables, good and easy to make.

Putting vegetables under glass, as in the case of the Piedmontese antipasto better known as Piedmontese vegetable gardener, is an excellent way to have fresh and genuine products at your fingertips, ready-made and all made directly by you. All you need to do is lightly cook many vegetables, including tomatoes, onions and carrots, and keep them in a jar . The fundamental thing, however, is that you sterilize the jars very carefully.

How to make Piedmontese antipasto

  1. Take the tomatoes, preferably the pachino ones , wash them and blanch them for a minute after making an incision with a knife.
  2. Meanwhile, clean and cut the onions into pieces.
  3. Drain and let the tomatoes cool slightly. Remove the peel (if they are hot it comes off by itself), then pass through a vegetable mill .
  4. Put the oil, the vinegar and the sugar in a saucepan, let it heat up slightly and throw in the puree.
  5. When it starts to simmer, add carrots and celery, previously washed and cut into small pieces.
  6. Add the green beans, cleaned and cut, after 15 minutes of cooking and, after another 10, the onions.
  7. Lastly, put the peppers, then cook for another 10 minutes. If you like, add grated nutmeg towards the end.
  8. Put the still hot vegetables in a sterilized glass container. Wait for them to cool down, then cover flush with the oil and seal hermetically with a new cap.
  9. Sterilize the jar by boiling it upside down for half an hour, let it cool thoroughly and then put it away in a cool, dark place .

Wait at least 40 days before consuming and check that the cap is hermetically closed when opening. The world of under glass is infinite. For example, you can also follow the recipe for homemade pickled cucumbers .

storage

The recipe for Piedmontese pickled vegetables allows you to keep vegetables in the pantry for several months . However, once a jar has been opened, we recommend consuming it within a maximum of 1 week and keeping it in the refrigerator. We do not recommend freezing.
