Preparing the poached artichokes is really simple and just a few ingredients are enough. Here is the original Neapolitan recipe.

If you are looking for a vegan side dish that is easy and quick to prepare, but at the same time tasty and perfect with both meat and fish main courses, Neapolitan-style poached artichokes are the recipe for you. This typical product is obtained by cooking the artichokes, in wedges or whole, in a little water and flavoring them when cooked with olives and capers.

So very few ingredients are enough to make this Neapolitan side dish but we can guarantee you that you will not be disappointed at all. As always, the greatest difficulty in recipes with artichokes is cleaning them, but you can opt for a product that is already clean or for a frozen one if you really don’t want to embark on this adventure.

How to prepare the recipe for poached artichokes

  1. First clean the artichokes by removing the tips, the outer leaves, the inner beard and the outer layer of the stem, which is too tough. Divide them in four and put them in a bowl filled with water acidulated with the juice of a lemon, leaving them for 30 minutes .
  2. Drain them well from the water and transfer them to a pan with the oil and the clove of garlic.
  3. Brown them for 2 minutes on high heat then cover them flush with water. Add a pinch of salt, cover half with the lid and cook for about 30 minutes or until the liquid is almost completely absorbed.
  4. Finally add the desalted capers and black olives and leave to flavor for a few minutes.

Your side dish is ready to be served hot. Among other recipes with artichokes, we recommend you try the classic Roman-style artichokes .

You can keep the poached artichokes in the refrigerator for 2-3 days . We advise you to heat them in a pan before consuming them.
