Preparation of the strawberry tart

  1. First sift the ricotta with the help of a narrow mesh strainer. Add the sugar to the ricotta and mix to obtain a creamy mixture. Cover with cling film and place in the refrigerator .
  2. Unroll the puff pastry. Place the first roll inside a rectangular cake pan. Take the second roll and place it on top. Fold the edges of the pastry inwards, prick the base with a fork.
  3. Cover the central part of the pastry with baking paper.
  4. Brush the edges with the beaten egg yolk, sprinkle a little sugar and bake in a preheated oven at 200°C for approximately 30-40 minutes . Once cooked, remove from the oven and leave to cool.
  5. Wash the strawberries, remove the small ones and cut them into pieces. Peel the banana and cut it into rounds .
  6. Spread the ricotta and sugar cream on the pastry base. Decorate with strawberries and bananas and serve.

It is preferable to consume the tart immediately after preparation because the ricotta cream tends to soften the pastry quickly .
