How to make gorgonzola and radicchio risotto

  1. First, make a sauté with the shallot, cleaning it and cutting it finely . Brown it in a large saucepan with two knobs of butter and in the meantime heat the broth.
  2. Continue cleaning the radicchio, which you will have to cut into strips , eliminating the center and the white and hard parts, which could be excessively bitter once the dish is finished.
  3. At this point, cook the radicchio in the saucepan over high heat and, after 5 minutes, add the rice.
  4. Toast the rice in the saucepan, then add the wine and start adding the broth. Turn from time to time and begin to add salt and pepper .
  5. Once the rice is cooked, stir in the butter, a handful of parmesan and the gorgonzola on a low heat, which will create the creamy effect together with the remaining broth.
  6. Serve with a handful of pepper, and enjoy your meal!

The variant with radicchio cream

Alternatively, you can cook the radicchio completely in a pan, remove 3/4 of it and blend it with a blender (adding hot broth as needed). At this point, pour the rice into the pan with the remaining part of the radicchio and proceed as per the original recipe and add the radicchio cream only after cooking and before stirring.

If you decide to try this more refined variant we advise you to keep the rice a little dry towards the end of cooking, in fact it will then be rehydrated with the radicchio cream and the other creaming ingredients.
