Radicchio and sausage lasagna is one of those quick and easy recipes that will make everyone at the table agree!

In this recipe, we will see how to proceed to prepare radicchio and sausage lasagna in a perfect way, so as to obtain a creamy and stringy dish. To prepare them we recommend using a particular type of radicchio , the red one from Treviso which differs in its particular elongated shape and narrow leaves.

The radicchio and sausage lasagna is characterized by the typical slightly bitter flavor of the radicchio which, accompanied by the intensity of the flavor of the sausage, makes the dish irresistible. Let's see, then, the ingredients and the procedure for preparing lasagna with red radicchio and sausage.

Preparing the recipe for lasagna with radicchio and sausage

  1. First, start by washing and cleaning the red radicchio and skinning the sausage.
  2. Remove the final core from the radicchio and cut it into small pieces. Also clean an onion and chop it finely.
  3. Take a pan and pour in some extra virgin olive oil (about four tablespoons ). When it is hot, add the radicchio and onion and simmer for just under 10 minutes.
  4. Fluff the sausage into a bowl using a fork.
  5. As soon as the radicchio is ready, season with salt and black pepper and add the sausage. Mix everything so that all the flavors come out well and mix together.
  6. Add the béchamel and continue mixing for a few minutes. Turn off the heat and move on to assembling the lasagna.
  7. Prepare a baking dish and spread a layer of radicchio cream, béchamel and sausage evenly at the base.
  8. Distribute the lasagna sheets well and cover with more seasoning until the three layers are finished (the last, upper one, must be with the cream);
  9. Place the baking dish in a preheated oven at 180°C for about 25 minutes . As soon as they are cooked and golden, you can serve the lasagna with red radicchio and sausage while still hot.


You can keep the rustic lasagna with radicchio and sausage in the freezer for about a month. When you want to eat it, leave it out of the freezer for 20 minutes and defrost it in the microwave. Then, reheat it in the oven or always in the microwave. If not frozen, refrigerate for 1 day in an airtight container.
