Preparation of the recipe for risotto with shrimp and rocket

  1. The first thing to do to make this recipe is to clean the shrimp, then, peel them and keep the scraps. Also remove the black gut that is on the back.
  2. In a small pan, pour a drizzle of oil and fry a clove of garlic, add the crushed prawns, parsley and cook for 4 or 5 minutes.
  3. Deglaze with a little white wine and add two liters of water. Season with salt and pepper and cook for about 20 minutes. Then, strain the broth and set aside.
  4. In a pan, brown a little butter with the finely chopped onion and toast the rice for a few minutes. Add the remaining white wine and let it evaporate completely.
  5. Continue cooking the rice by adding a little broth at a time. Meanwhile, in a blender, add the oil and the clean bunch of rocket and blend to obtain a pesto.
  6. A few minutes before finishing cooking, add the shrimp. Turn off, remove from heat and stir in the remaining butter and Parmesan. Your rice with shrimp and rocket is ready to be served.

For the rice with shrimp, rocket and lemon, cook the rice, let it cool and season with the seared shrimp, chopped rocket, oil, salt and fresh lemon juice.
