This quick and easy first course is also perfect for those who follow a vegetarian diet . Furthermore, the use of this cheese to whisk the rice allows you to keep calories under control.

The result will therefore be a creamy recipe beyond imagination but also very tasty . The sweet taste of zucchini in fact goes very well with that of stracchino and, if you really want to give the dish a further boost of flavor, at the end you will also find the omnivore-proof variant with pancetta .

How to prepare the recipe for zucchini and stracchino risotto

  1. First, finely chop the shallot and brown it in a pan with the oil. Wash the courgettes well and cut them into slices then add them to the shallot along with the rice.
  2. Toast everything for a couple of minutes then start cooking by covering the rice flush with boiling broth. From now on it will take approximately 16-18 minutes . It is very important to cook the rice by adding broth only to cover it flush and always hot so as not to stop cooking.
  3. Once the rice is ready, turn off the heat and add the stracchino and Parmesan cheese to whisk. Serve immediately when it is still hot.

To prepare the variant we were talking about at the beginning, that is the zucchini risotto with stracchino and pancetta, add 150 g of diced, sweet or smoked bacon, immediately in the first step, together with the shallot. Then continue as per the recipe.

In any case, we recommend that you also try the simpler version of the dish, that is the risotto with courgettes : it is really delicious.

storage

As with all risottos, also in this case we advise you to consume it freshly made in order to appreciate its perfect creaming. However, if you have any leftovers, reheat it in a pan or microwave before consuming.
