The sandy cake is a typical dessert of Mantua , also known as the Torta del Tre due to the particular doses of its ingredients. It is a flourless cake, therefore also suitable for those who suffer from gluten intolerance , and is quite simple to prepare.

According to legend, the sandy cake must be prepared by always mixing the dough in the same direction , otherwise the recipe will fail. For fear of ruining everything, we made it as tradition dictates: the sandy cake, in fact, with its particular consistency , really deserves to be enjoyed in the best possible way! Serve it with an afternoon tea and success is guaranteed.

How to prepare the sand cake recipe

  1. Start by separating the egg whites from the yolks .
  2. Whip the first ones until stiff with the help of an electric whisk.
  3. Separately, in another bowl, again with an electric whisk, cream the butter with the sugar until the mixture is light and fluffy.
  4. Still with the whisk in action, add the egg yolks one at a time, mixing until they are perfectly incorporated.
  5. Flavor the mixture with grated lemon zest.
  6. Add the sifted starch (do not skip this step because the starch tends to form lumps) and the yeast , mixing from bottom to top without dismantling the mixture.
  7. Finally, always with movements from bottom to top, mix the egg whites .
  8. Pour the mixture into a springform pan with a diameter of 20-22 cm lined with baking paper or buttered and floured and cook at 180°C for 40 minutes , testing with a toothpick before removing from the oven. If it is still raw in the center, continue cooking for another 10 minutes, covering the surface with a sheet of foil to prevent it from burning.
  9. Serve the sandy cake only once it has cooled completely.

storage

This cake can be kept under a glass bell jar, or a special container, in a cool place for 3 days. We advise you to be very careful when choosing the place to store it: for it to last longer it is important that it is in a dry place, away from sources of light or heat.
